The PK House Salad. Mixed field greens with grape tomatoes, cucumber disks, Bermuda onions, carrot sticks and shredded parmesan cheese, served with our mango balsamic vinaigrette. Seafood Taco Salad. Caribbean Cobb Salad. Mixed baby greens topped with poached shrimp, mango, avocado, pineapple, black beans, sweet yellow peppers, shredded Monterey Jack cheese and served with our house-made citrus vinaigrette.
Coconut Shrimp Platter. Butterflied, golden fried shrimp served in a sundried tomato-basil tortilla bowl, with raspberry melba and mango dipping sauces. Mango Tango Grouper. Bubba Lump Crab Cakes. Two Bubba-sized lump crab cakes baked to perfection and finished with a zesty Buerre Blanc. Served with yellow rice and grilled asparagus. Yucatan Snapper. Delicately seared, Yucatan spiced red snapper, finished with a toasted coconut cream sauce, over yellow rice, served with sauteed seasonal vegetables.
Creole spiced shrimp, tossed with andouille sausage, garlic, fresh diced tomatoes, and green onions, in a spicy cream sauce served over stone ground grits. Cumin and coriander encrusted filet of salmon, topped with our honey, citrus, soy sauce creation. Delicately finished with a wasabi aioli and soy reduction. Crab Stuffed Grouper. Gulf of Mexico grouper with our tantalizing lump crab stuffing. Broiled and drizzled with a zesty Caribbean, white wine butter sauce.
Market Price. Seafood Sampler. A delectable seafood combination of Gulf of Mexico grouper, scallops, and shrimp. Served broiled, blackened, or fried with one side. Mediterranean Paella. Grouper, scallops, shrimp, mussels, chicken and andouille sausage simmered in an Ancho chili red wine sauce with yellow rice and vegetables. Coq Au Rhum. A Caribbean twist on the classic French version, braised chicken with fresh mushrooms, tomatoes and potatoes in a dark rum cream sauce with a hint of scotch bonnet pepper.
Seafood Lasagna. A French Riviera classic, layers of pasta with shrimp, scallops, clams and basa, fresh fennel, pernod, spinach, onions, a hint of sweet basil, ricotta and mozzarella cheese. Baked and served with garlic bread sticks. Island Spiced Angus Ribeye. An island spiced, dry rubbed 12 oz.
Angus ribeye drizzled with a habanero demi-glace served with sides of balsamic caramelized onions and garlic smashed potatoes and sauteed fresh vegetables. Trinidad Pork Loin. Caribbean spiced and slow roasted pork loin, sliced and served with an apple and guava laced poblano demi-glace.
Served with garlic smashed potatoes and sauteed fresh vegetables. Center-Cut Barrel Filet. Caribbean spiced 8 oz. Angus filet grilled and flanked with a light habanero demi glace. A full rack of baby back ribs, jerk seasoned and marinated, slow roasted and finished on the grill with our own mango BBQ sauce. Jerked Chicken. Caribbean jerk seasoned chicken breast, pan seared and oven roasted, finished with our mango salsa and served over yellow rice with sauteed fresh vegetables. All traditions are served with a side of fries and cole slaw. Classic golden fried fish and chips served with tartar sauce.

Coconut Mahi Schoolies. Cuts of sweet coconut breaded Mahi Mahi, golden fried and served with a Thai chili dipping sauce. A golden fried treasure of shrimp served with a Caribbean tartar sauce. Floribbean Fish Tacos. Two soft shelled whitefish tacos blackened or fried topped with a spiced mango-jicama slaw, diced tomatoes, green onions, guacamole, and finished with a Key Lime citrus sour cream drizzle.
